It's simply not possible to make it work without the NFS server.
That's just how it works. I suggest you need to ask whoever runs your
NFS server to fix it so it has more capacity.
There's some breaking news on this issue.
During our internal testing we also observed problems where NFS writes would hang, with
virt-v2v but also with other tools (it's an NFS bug).
This was fixed by updating the kernel on the virt-v2v client to the latest version.
